Make yourself a healthy rainbow smoothie with these 10 tips:
1) Frozen and fresh
You’ll only need ½ cup of vegetable or fruit so cut them up before and freeze any leftovers in an airtight container or zip-lock bag. Remember to first freeze the pre-cut fruits you need before you blend.
2) Thicken the consistency
To ensure the rainbow layers don’t sink through so easily, blend fruits or vegetables with a ¼ cup of Greek yoghurt, bananas or avocado. Or, you can blend it with ½ cup of oats.
3) Liquids for blending
You still need some liquid when you blend fruits and vegetables. Use water, coconut water, milk (nut or dairy), kefir, freshly squeezed fruit or vegetable juice.

Mix one or more of these ingredients to create the colours:
Red: Beetroot, strawberry, raspberry, cherry, red dragonfruit, watermelon
Orange: Orange, carrot, papaya, steamed pumpkin
Yellow: Mango, pineapple, peach, steamed sweet potato
Green: Spinach, kale, romaine, collard, Swiss chard, powdered green tea, kiwi fruit
Blue: Blueberries, or stir red cabbage juice with ½ teaspoon of baking soda to turn the purplish water into blue for natural colouring
Violet: Red cabbage, purple carrot, or combine cherry and blueberry together to create the colour
White: Apple, coconut flesh, pear, white dragonfruit, lychee, rambutan
5) Boost it up
Boost the flavour with cinnamon, raw honey, dark chocolate, lemon juice, or mint leaves.
6) Need protein, fat or fibre?
Add in 1 tablespoon of peanut or almond butter, coconut oil, chia seeds, tahini, walnut, or flax seeds into the mix.
7) Superfood goodness
Blend in about 1 teaspoon to 1 tablespoon of any two or three of the following ingredients: raw cacao, dates, ginger, cayenne, turmeric, goji berry, or acai berry.
8) Top it off
Toss in coconut flakes, granola, pumpkin seeds or leftover fresh fruits you didn’t blend as topping.
9) Blend separately
Blend each rainbow layer separately, and transfer it to a bowl. Rinse the blender each time before the blending the next layer.
Use a 15.5 oz drinking glass or mason jar, and carefully build your rainbow, layer by layer. The white layer is useful to lighten the whole look.
