Ingredients: 1kg Pure South Frenched Lamb Rack; 100g Sliced onion; 10g Chopped spring onion; 2 Diced de-seeded red chilli; 500g Korean Bulgogi sauce; 100g Peeled and cored Korean pear; 1 tbsp Soy sauce; 1 tbsp Vinegar; 2 tbsp Water; ½ tsp Sugar; ½ tsp Dashi powder; 1 tbsp Korean chilli flakes; 1 tbsp Toasted sesame seed

Ingredients

1kg Pure South Frenched Lamb Rack

Marinade ingredients

100g Sliced onion

10g Chopped spring onion

2 Diced de-seeded red chilli

500g Korean Bulgogi sauce

100g Peeled and cored Korean pear

Dipping sauce ingredients

1 tbsp Soy sauce

1 tbsp Vinegar

2 tbsp Water

½ tsp Sugar

½ tsp Dashi powder

1 tbsp Korean chilli flakes

1 tbsp Toasted sesame seed

Instructions

Blend pear in a food processor
Divide the rack into chops
Mix marinade ingredients and marinate the lamb chops
Refrigerate marinated chops overnight
Mix dipping sauce ingredients
Grill each side of the rack cutlet for about 3 minutes till caramelised
Baste chops with the marinade
Serve with dipping sauce
